Basic Bruschetta 12 to 14 fresh ripe plum tomatoes (approx. 1 3/4 pounds) 2 tablespoons minced garlic 2 tablespoons minced shallots 1/4 cup plus 1/3 cup olive oil 3 Tbsp fresh chopped basil 2 Tbsp fresh chopped oregano 2 Tbps fresh chopped thyme 1 Tbps balsamic vinegar Salt and pepper to taste Saute garlic and shallots gently in 1/4 cup oil. Add 1/3 cup of oil to stop cooking. Cut tomatoes into 1/4-inch dice and place in a bowl. Toss oil, garlic, and shallots with tomatoes. Add basil, oregano, and thyme. Add balsamic vinegar. Add salt and pepper. Toast the bread. Spoon tomatoe mixture over bread. Serve at room temperature.
