CAESAR SALAD 1 chilled head romaine lettuce 1/4 cup olive oil 2 tbsp. lemon juice salt and black pepper 1 tbsp. anchovy paste 1/3 cup coarsely grated parmesan cheese 2 hard boiled eggs croutons Tear lettuce leaves into bite-sized pieces and put them into a salad bowl. Mix the oil, lemon juice, parmesan cheese, anchovy paste, and seasoning to taste, and toss with lettuce to coat. Coarsely chop the hard boiled eggs. Add chopped eggs, croutons and parmesan cheese, toss gentle, and serve immediately.
